girls night

A quiet night at home. Invited some friends over for dinner and catching up with some old friends. I decided to make some simple and healthy dishes.
First for starter, i made a salad top with soba, drizzled with honey ginger vinaigrette. For the main, i made my favorite potato crusted salmon accompany with wasabi mashed potato.
My friends brought over apple crisp for dessert. After a wonderful dinner, we ended the night with an intense game of spongebob monopoly. We are all bankrupted at the end of the game. Winner: Miglia.







Put in any mixed greens for your salad. For the soba, boil some hot water and add a little salt to prevent them from sticking together. Pick them up after cooked about 8-10 min. Put them in ice cold water and let them sit. Mix the sauce for the salad. Add in honey, soy sauce, rice vinegar, virgin olive oil and grated peeled ginger. Salt and pepper to taste. This is a refreshing spring sauce. It's not too sweet and the ginger gives the salad a unique flavor.  Mix the soba with the sauce and place a bed of salad underneath. Twirl the soba in a fork and place it on the salad. Voila
Salmon fillet.
Salt the salmon with sea salt for 10 min. Wash them off and dry the salmon. Set three dishes for salmon station. First cut them in pieces and squeeze some lemon sauce over them. Lightly flour the fillet. Beat an egg in a bowl and dip the pieces in. Then cover them with potato starch. (you could also use corn starch as a substitution.)
As for the mashed potato, Boil the potatoes and peeled them. Add butter, milk salt and pepper into the mashed potato. Add a little bit of wasabi and it's done.



This a delicious! Apple crisp. You could see slices of apple and perfectly baked crisp. Buttery and crumbly. Not too sweet. Perfect with ice cream! Thank you Yvonne, Miglia and Maureen!!
